- Place 200g of cashews in a bowl, cover them with water, and let them soak for 3 hours. Drain the cashews before use.
- Gather all the ingredients: soaked cashews, lime juice, deodorized coconut oil, garlic, malted yeast, Espelette pepper, salt, pepper, and finely chopped basil leaves.
- In a blender, combine soaked cashews, lime juice, deodorized coconut oil, garlic, malted yeast, Espelette pepper, salt, and pepper. Blend until smooth. If needed, add 20ml of water to facilitate blending.
- Taste the mixture and adjust the seasoning as necessary. Add more salt or pepper to suit your taste.Fold in the finely chopped basil leaves, ensuring an even distribution throughout the mixture.
- Transfer the cashew cheese mixture into a mold or container of your choice.
- Place it in the refrigerator to cool and set for a few hours.
- Once set, present your cashew cheese with basil on a platter with crackers, bread, or vegetable sticks. The flavors will have melded beautifully.
