Chocolate Banana Bread
Breakfast is an important topic when it comes to PCOS. When I have been diagnosed with this sickness, I read many different articles and studies about what is the best food, when should I eat it, and why.
From those studies, I learned that eating breakfast can help you in the way how you body will process food during the day. Indeed, breakfast will help to lower your Insuline levels and reduce your cravings. Those studies are for example showing that, if you should have one sweet excuse regarding your diet, better do that in the morning. If it’s sugar free, gluten free and low carb, that’s even better.
I always loved banana bread for two reasons: easy to bake and delicious. It is one of those things, where you just have to throw some stuffs together, mix them in a blender, put them in the oven and it’s done. Nothing big and complicated, full of protein, healthy carbs and fats. A great start in the day.
For this special banana bread, I used Cassava flour from iherb and their sugar free dark chocolate. If you don’t have access to those things you can replace the Cassava flour with almond flour and rice flour. The carb level at the end will still be low.

Instructions
- Put Bananas, cassava and almond flour, eggs, coconut oil and baking powder in a mixer and blend them until it is a smooth dough.
- If you want, you can add a Banana (cut in half) on top of the dough.
- Bake it in the oven for 45 minutes on 180°.
- 3-5 Minutes before the bread is done, top it with the dark chocolate. Let it melt and take it out of the oven.
