  1. Preheat your oven to 175°C (350°F).
  2. In a mixing bowl, whisk together the 2 eggs, 1/4 cup of vegan milk, 2 tablespoons of sugar, 1 tablespoon of melted butter, and 1/4 teaspoon of cinnamon until well combined. This will be the mixture you'll dip the rice papers into.
  3. Dip one rice paper it into the egg mixture, coating both sides evenly.
  4. Place the dipped rice paper on a flat surface. Repeat the dipping process with 3 more rice papers, layering each one on top of the previous one, so you have 4 layers of rice paper.
  5. Once all 4 rice papers are layered, cut all 4 layers of the rice paper to form a triangle in the middle
  6. Place one side of the cut rice paper vertically on the triangle rice paper
  7. Place the other cut rice paper piece horizontally along the long end of the triangle-shaped rice paper
  8. Spread 1 tablespoon of melted Nutella onto the middle of the triangle.
  9. Start rolling the triangle from the wider end towards the pointed end, sealing the Nutella inside and forming a croissant-like roll.
  10. Repeat the process with the remaining 4 rice papers to make a second croissant.
  11. Place the rolled rice paper croissants on a baking sheet lined with parchment paper.
  12. Bake in the preheated oven at 175°C (350°F) for 25-30 minutes, or until they are golden and crispy.
  13. Allow the croissants to cool slightly before serving. Enjoy your delicious Nutella-filled rice paper croissants!
