Beef Zucchini Meatballs & Mint Mango Salad
Do you know the blank paper syndrome that artists and writers can have sometimes? When they feel like they have not any inspiration to do anything and they are blocked? Sometimes I have to admit that I feel the same way regarding cooking. You do not know what to cook, how to use all this food in your house to do something nice and creative. And it is even more complicated when you suffer from different food allergies.
That is what happened to me recently so I had to go through social media, and I found this amazing recipe on the Pinterest account of Healing Family Eats: Zucchini Meatballs with Mint Mango Salad.
We decided to adapt it to our needs. It is pretty easy to do, low in histamine, healthy and delicious.
For the meat prep of this recipe, you will need Minced meat, zucchini, corn starch, onion, garlic, parsley, and salt.
And for the salad, you will need 1 mango, one onion, olive oil, salt, and mint.
You can decide to present them on skewers or in another way, up to you! Those will anyway impress your guests and make them feel special!
If you have a histamine intolerance: Make sure to buy frozen minced meat or fresh one directly from the butcher (ask the butcher to give you a freshly made batch of minced meat) to make sure, no histamine was produced yet.
