It is Christmas time. It is time for hot chocolate, romantic christmas movies, christmas jingles, warm blankets, hot tea, christmas cookies and more. David and I already got all our christmas gifts and are ready for a festive timeout.
But as we all know: sadly it is also time for COVID. And for a lot of us that means, that we stay at home and are either alone or with our partner and kids. And that is why, we created a christmas special including 4 recipes that are easy, delicious and donโt include too much work. As we all deserve something special once in a while we want to help you to make christmas special and meaningful even in those special times. The first one is our special, gluten free, low carb
Cinnamon Pancakes
Those pancakes take you 15 minute. They are vegan, sugar free, low carb, and an easy way to make Christmas morning more special, for the whole family or just for yourself.
You can top those Pancakes with whatever you like: monk fruit syrup if you want to keep your Insulin levels low, Nutella, Fruits, or vegan whipped cream. We topped ours with vegan butter and Maple syrup.

If you have a histamine intolerance: be careful while using cinnamon. We recommend leaving it out.
Cinnamon Pancakes
Ingredients
Instructions
- Whisk all ingredients for the pancake dough together and let the dough rest until cinnamon topping is prepared.
- Melt vegetable shortening, add monk fruit and cinnamon and whisk together
- Add 1/4 cup of rested pancake dough and whisk well together.
- Warm up a pan with 1 tbsp of vegetable shortening and pour some of the pancakebatter into a pan.
- Directly top pancake dough with 1 tbsp of the cinnamon mix and let the pancake fry for 3-4 minutes. Once the pancake top is firm enough, turn over the pancakge.
