If you can’t eat dairy or you are vegan, you know how tough it can be on summer vacation to not be able to eat most of the ice creams and desserts. David and I have been on vacation recently, and all I (Shirien) wanted, was to eat milky, creamy ice cream. And we don’t just want it for us, we want everyone to be able to enjoy a delicious ice cream during summer.
Look at those colors! Unbelievable. To be 100% transparent with you: we used some food coloring to make this ice cream even more pop. But the trick for a delicious pistachio ice cream is pistachio butter! You can find the recipe for that soon on our blog.

This fabulous ice cream is made out of vegan whipped cream, vegan condensed milk, pistachio butter and optional food coloring.

- Whipp the vegan whipped cream until medium to stiff peaks form, about 1-2 minutes. Do not over beat.
- Add condensed milk and mix for a few seconds until well combined. Do not over beat.
- Take half of the whipped cream and add it to a different bowl. Add the pistachio butter and optional the green food coloring. Mix for a few seconds until well combined. Keep the mixing process as short as possible to not overbeat the whipped cream.
- Take a baking form of choice (for example a square baking form) and fill the baking form alternately with the regular cream and the pistachio cream. Add pistachios occasionally. Once the baking form is filled, add pistachio on top to decorate.
- Cover the filled baking form and freeze over night.
