Vegan Meringue Butter Cream
If you love baking as much as we do, this recipe is for you: our meringue buttercream is the perfect vegan buttercream that we could create! It is fluffy, delicious, sugar free and so easy to make!
The crazy part is, you need only 4 ingredients: Aquafaba/Chickpea water, vegan butter, sugar free Icing sugar (we used xucker.de) and vanilla extract. That’s it!

Instructions
- Take vegan butter out of the fridge, so it can get to room temperature.
- Heat up some water in a pot, cover the pot with a bowl (bowl should not touch the water, if needed add a s siff in between pot and bowl).
- Add the Aquafaba and the icing sugar and mix until the sugar is dissolved (do not let it start boiling).
- Remove the bowl from the heat and use an electric whisk and beat on high speed for 15-20 minutes until the mixture is completely cooled, stiff and glossy.
- Cut vegan butter in chunks and add it slowly. Mix in between.
- Once all the butter is added, mix until the texture is smooth and stiffen. Don’t worry if it flattens in between, once the whole amount of butter is added it will come together
- If desired add food colouring
- Enough for 6-8 cupcakes
