We saw that online and wanted to try it in our way and share our version as soon as possible. So here are our Vegan sushi cups. This snack is made in muffin forms, with a nori paper base, and topped with rice, avocado and a good sriracha-tofu mix. And you just have to put all that in the oven for 20 minutes on 180 degrees. (see video here)
This will always be a good surprise for your guests and they will for sure ask you more about those cups !

For the Rice
- Take 1 cup of your rice, rinse well in cold water.
- The rice needs to be cooked 1 part rice to 1 part water. So place the cup of rice in a pot and add 1 cup of water, add the lid and bring to the boil.
- Once it's boiling reduce to simmer for around 8-10 minutes but keep an eye on it. They rice should never stick to the bottom of the pot but absorb all water.
- Once the rice is cooked, cool it quickly by spreading it out on a tray, add 4 tbsp unseasoned rice vinegar, 1 tsp agave syrup and salt. Mix well.
For the Tofu
- Cut the Tofu into cubes, mix with mayo, sriracha, agave syrup, salt and corn starch.
- Cut the Avocado into cubes as well.
Prep the sushi cups
- Cut the nori paper into squares. You will need two squares per muffing form.
- Cover the inside of the muffin with two nori papers and fill with rice. The nori paper should be a bit larger then the muffin to be able to hold the rice in once done.
- Top with the tofu mix and add avocados on top.
- Bake for 15-20 Minutes on 180°.
