Rochers & Vegan Raffaellos

Sometimes, you just want to skip your diet for one moment, one dessert or one day, for a good chocolate dessert for example.

If you know the Rochers & Raffaellos chocolates from the famous brand Ferrero, you might also know that it’s complicated to find a version for people who are intolerant to gluten, lactose, or even nuts.

That is the reason why we decided to recreate or own recipes to fill that need: We made a gluten-free version of the rochers, and a vegan, nut-free version of the raffaellos.

For the rochers you will need : milk chocolate with nuts, gluten-free wafers, crumbled nuts and nutella. For the raffaellos, all you have to grab is vegan white chocolate, gluten-free wafers or biscuits of choice and coconut flakes.

The process itself is pretty fast: you will only need 15 minutes to prepare and 30 minutes of cooling time in the freezer. And that’s it, ready to impress all your guests and remind them of an expansive and famous taste!

Instructions

For the Rochers
  1. Crumble chocolate wafers in small pieces
  2. Take Nuts out of nut chocolate and melt the chocolate.
  3. Form little balls out of Nutella, press one nut (the ones you just took out of the nut chocolate) into the middle of each Nutella ball, roll the Nutella ball in the crumbled wafer and freeze them for 30 Minutes
  4. Take the melted chocolate, add the hazelnut mix (make sure the hazelnuts are chopped real small), and dip the frozen Nutella balls into it, until they are well covered.
  5. Let them rest in the fridge for 1 hour
For the vegan Raffaello
  1. Crumble gluten-free chocolate wafers in small pieces.
  2. Melt one bar of white chocolate and mix with crumbled wafers.
  3. Fill into a form of choice and freeze them for 30 minutes (I used a mini muffin form and filled around 1-1,5 tsp into each of them. Check out our Instagram to see how it is done)
  4. Melt the other bar of white chocolate, dip the frozen gluten-free wafer balls into it and roll them in shredded coconut
  5. Cool them for 1 hour in the fridge
