Vegan Gnocchis

Gnocchis !!! We all love them, whether while being kids or grown ups, gnocchis always have a big success.

But when it comes to finding them gluten-free it is more a nightmare than a dream. And it is even more when you try to make a vegan meal out of it.

So we decided to do our own italian inspired, gluten-free and vegan gnocchis recipes and we are pretty proud of it !

Here is what you need: 500g potatoes, 120g of chickpea flour and the same amount of corn starch. Once done, top them with a vegan pesto and roasted pine nuts, and all you and your guests need to do is enjoy it like in you would in Italia.

Gnocchis

One of the easiest and best gluten free and vegan gnocchi recipes! Try it with vegan pesto and vegan permesan! So good :)

  1. Peal, cut and cook potatoes in salt water.
  2. Smash the potatoes with a fork, add corn starch, salt and knead everything into a smooth dough. Let the dough rest for 1 hour.
  3. Now shape the potato dough into rolls that are about 2 cm wide and cut off 2 cm long pieces. Press in the typical groove pattern with the tines of a fork. Let all the gnocchi simmer in salted water over a medium heat for about 8 minutes and take out of the water.
  4. We recommend to eat gnocchis with vegan pesto and vegan parmesan.
