Tteokbokki Skewers (rice cakes)

If you never heard about rice cakes or Tteokbokki, you definitely need to read this article and try this kind of recipe.
Tteokbokki is a korean meal made out of rice cakes and gochujang (spicy chilly sauce). The rice cakes that we are talking about are in general made out of sushi rice, corn starch, and salt. It is really a super tasty recipe and we loved it the first time we tried it in restaurants.
So we wanted to create our version of those rice cakes, made out of rice paper, and a gluten-free version of the gochujang sauce. That is how we ended doing our delicious Tteokbokki skewers, filled with vegan cheese.
In terms of ingredients, you will need rice paper, vegan cheese, water, skewer sticks, gochujang, gochugaru flakes, mirin (flavored sweet vinegar), oyster sauce, agave syrup and water.
They can actually be enjoyed in a sauce but we decided to present it on skewers. That could for example be the perfect finger food for your guests !

- Dip one dry rice paper in water until it is completely wet.
- Lift sheet carefully from water, placing it on a board.
- Fill it with cheese, tightly roll and cut into 3-4 big pieces.
- Cut a dry rice paper into 3-4 squares large enough to wrap one of the pre-cut cheese rice paper rolls in each.
- Dip one of the rice paper squares in water until it is completely wet.
- Lift sheet carefully from water, placing it on a board.
- Place one of the cheese rice paper rolls in the center of the wet rice paper square.
- Fold the sides in, fold edge closest to you up and over the cheese rice cake and roll sheet to enclose. Now the cheese won't be able to fall out anymore.
- Repeat until you have around 20 cheese rice cakes.
- Mikrowave for 1 1/2 Minutes and assemble on skewers (each skewer should be made out of 4 cheese filled rice cakes).
- Mix all ingredients for the sauce in a pot and warm up for 5 Minutes ond high heat.
- Brush the sauce on the skewers until the cheese rice cakes are fully covered.
- Decorate with sesame seeds and enjoy.
