Summer Rolls
Gluten-free and dairy free
Summer Rolls are the perfect dish for a hot summer evening. They are so fast, low in calories, you can put in whatever you like, make them together with friends and everyone can eat them: vegans, people with allergies as they all can be done individually.
This time we used rice noodles, mango, avocado, beef, shrimps, surimi for David (as it contains gluten, Shirien can not eat it), cucumber, Paprika, mayo, spicy mayo, sriracha, and herbs. But as mentioned you can create histamine-free Summer rolls, you can create vegan ones with tofuโฆ whatever you! like. And the best part is the dipping! You can dip them in any sauce you like, like Mayo, Soya Sauce, Peanut Sauce etc.

Ingredients
Instructions
- Cook Rice Noodles.
- Cut all Veggies and the Mango in thin slices
- Dip Rice paper in water and put it on a plate
- Put some of the cooked rice pasta horizontally in center of sheet, place shrimp or beef on top of the rice pasta and veggies/fruits of choice next to it
- Top with Sauce and herbs choice e.g. mayo, sriracha etc.
- Fold corner point facing you up over filling; roll sheet to enclose filling, folding in sides after first complete turn of roll. Repeat with remaining sheets.
- Cut them into half and dip them into Sriracha-Mayo or for example Soya sauce peanut sauce etc. Enjoy!
